Cut the Sodium: Highlights from the “Connecting Public Health and the Food Industry Web Form Series”

Sodium picThe evidence against excessive sodium intake just keeps coming.

Consuming too much sodium can raise blood pressure levels, contribute to hypertension and inevitably increase risk of heart disease and stroke—the two leading causes of death in the world. Excessive sodium intake is also associated with osteoporosis, stomach cancer, and kidney disease.

Still, the average American consumes 3,400 milligrams of sodium per day—more than double the 1,500 milligrams recommended by the American Heart Association and far exceeding the 2,300 milligrams recommended by the U.S. government in its 2015-2020 Dietary Guidelines for Americans.

So, why are we consuming so much sodium? Well, it’s often hidden in our favorite foods.

Approximately 75 percent of total sodium intake comes from the processed and commercially prepared foods we buy at the grocery store and in restaurants. Since the average person has little control over the sodium content in these foods, it is often difficult to reduce sodium intake.

Healthy is trendy

But wait, there’s good news!

Health and wellness are quickly emerging as serious issues in the future of foodservice. According to the Futures Company, the average person in the U.S. now places more emphasis on healthy food decisions than ever before; 73 percent say they are more interested in healthy eating practices than they were a few years ago.

Consumers are calling for locally-sourced, fresh, organic and natural ingredients, clean labels, and simple ingredients. As consumer preferences evolve, food service operators are figuring out how the growing emphasis on health and wellness converges on factors like sustainability, atmosphere, authenticity, flavor, texture, and taste—the total food experience.

Food manufacturing companies and restaurants are adopting voluntary guidance from the FDA

Complementing recent trends in shifting consumer expectations, the Food and Drug Administration (FDA) recently released voluntary guidance to encourage food manufacturers, restaurants, and food service operations to reduce sodium in foods. As food manufacturing companies and restaurants adopt the voluntary guidance, we’ll see healthier, less salty foods made available to you and millions of other consumers. Several food industry companies, including General Mills, have already taken action by adopting voluntary sodium reduction targets well before the FDA guidance was released.

It’s time to connect public health and the food industry

NNPHI is partnering with Health Resources in Action and The Culinary Institute of America to connect public health and the food industry.

The recent alignment of interests between public health, the food industry, and consumer demand creates an unprecedented opportunity for cross-sector collaboration to reduce sodium in foods prepared, sold and serve in food service settings.

It’s a win-win.

Since January 2015, NNPHI has collaborated with the Centers for Disease Control and Prevention (CDC), Dialogue4Health, The Culinary Institute of America and other strategic partners, to host a national web forum series featuring food industry representatives and public health practitioners who are making a difference to reduce sodium across the country.

Recognizing the need to increase understanding across sectors, we engaged state and local health departments, culinary experts, dieticians, food service providers, large and small manufacturers, product researchers, corporate wellness and sustainability professionals, and other experts to share promising practices in sodium reduction.

We’re also collaborating with The Culinary Institute of America to produce a series of short training videos for food service providers and kitchen staff highlighting cooking skills and techniques to boost flavor while reducing sodium.
